Dessert quesadillas

Youll need:

3 pieces of medium tortilla bread
2 tbsp natural cream cheese, ex Philadelphia
5 tbsp crushed pineapple, drained
2 tbsp raspberry jam
1 dl fresh raspberries
1/2 tbsp butter
1/2 tbsp icing sugar
2 tsp liquid honey or syrup

A double dessert quesadilla with cream cheese, pineapple and raspberries

Instructions:

  • Spread cream cheese evenly over two of the tortillas. Place crushed pineapple on top of one of them and spread to the edges.
  • Place the second cream cheese coated tortilla on top of the pineapple, cream cheese side down. Spread the jam on top of that tortilla.
  • Chop the fresh raspberries and place them on top of the jam. Cover with the third tortilla.
  • Heat a frying pan over the open fire and melt the butter. Once melted, add the double quesadilla and fry until browned on the bottom. Then turn it over carefully and fry so that side also gets brown.
  • When both sides have browned, add the quesadilla and divide it into four. Then drizzle over a little honey or syrup and dust with icing sugar.
